    A hundred years ago, food was simple, real, and unprocessed, and chronic disease was rare.
    Bread was made from flour, water, and salt, oils were cold-pressed, fish were wild caught, and flavor came from herbs and spices, not artificial flavor enhancers.

    In today’s modern diet, ultra-processed foods, industrial seed oils, chemical additives, and factory-farmed foods have replaced traditional nutrition. Fruits are often ripened with chemicals instead of time, and many of the foods we eat daily are far removed from how humans evolved to eat.
